The first thing about the Red Stag Grill that grabs the senses is the decor. Antlers encircle the dining area amidst a lush atmosphere of plush red chairs, soft lights, ornate dining tables, and tasteful art. The interior is reminiscent of a Rockies restaurant locale like Telluride with a dash of Park City. Yet, this Asheville restaurant spot in the heart of Western North Carolina.

Welcome to Red Stag Grill, where ordinary is the furthest thought away. Cuisine matches the luxurious landscape, and every plate flares with originality. Whatever time you choose to go–brunch, lunch, dinner, or night-caps –Red Stag offers some of the best in Asheville cuisine.

Most hotel eateries offer dishes with elegant words on their menu, but lack real taste when a plate arrives. The Bohemian Hotel in Biltmore Village, which houses the Red Stag Grill, offers a menu with guaranteed gourmet adventure. Dishes like oyster stew with truffle essence or mountain river elk tenderloin taste way beyond what mere words can describe.

The indecisive diners can have a four course wine and dine menu set up for them. There’s even a carnivore’s corner with a choice of five select steaks, the standout being the local Carolina Bison Ribeye. And like any scrupulous menu, wine pairings are suggested with each dish.

As mentioned before, the dishes and the decor are a vacation for the senses. The ideas begin with the very talented executive chef, Adam Hayes. After being Chef de Cuisine at the Proximity Hotel in Greensboro, NC, Hayes moved to Red Stag. His European comfort food ideals sit elegantly amidst local fares like beef goulash with spaetlze and ruby Sunburst Trout dip.

Hayes also has a Midas touch with creating themes that define the present Asheville scene. Past events include the Father’s Day Local Beer Tasting Menu; the very sensual Valentine’s Day, which showcased a Lover’s Duo with braised short rib and glazed sea bass; and Truffle Fest where Hayes hosted chefs and foodies from around the world to celebrate the king of all mushrooms.

Seasons change and so does Hayes’s menu. Close connections to farms, wineries, and the overall Asheville demand for great food keeps Red Stag and Hayes a step ahead of the culinary curve. Europe elegance with down home farm freshness is a nightly occurrence.
